Banana Omelet like in Cuba

Do you wish to change scenery or find a bit of exoticism? Here, you can do all of that with this  banana omelet, a simple and complete dish straight from Cuba! This recipe is inspired from the book La Cuisine de Cuba (Cuban Cuisine) by Irina Vigne Cardoza-Carcases (Hachette, Paris 2010) in which there is also another delicious and amazing recipe: chicken with chocolate sauce!

Ingredients for 2 servings of banana omelet

  • 4 eggs
  • 1 medium onion
  • 1 ripe tomato
  • 1/2 red bell pepper
  • 1 ripe banana
  • 10 ml tomato coulis
  • 1/2 cup grated cheese
  • 1 small slice of ham
  • 1 tablespoon olive oil
  • Salt, pepper

Preparation

  1. Peel the onion and wash the tomato and bell pepper. Chop all three vegetables. Cut the banana into slices and the ham into cubes.
  2. Brown the onion, bell pepper, and tomato in a well-oiled pan.
  3. In a bowl, mix the eggs, tomato coulis, banana, grated cheese, and sliced ham.
  4. Pour the mixture into the pan, mix with the vegetables and cook as an omelet, carefully turning it halfway through cooking.

 

Banana brings a sweet and original taste to the omelet. For a balanced meal, the omelet may be served with green salad. This banana omelet is ideal for everyday lunch or dinner. It can be prepared in less than 15 minutes and is perfect as an alternative to the mushroom omelet!
